Holiday Cinnamon Rolls

For the dough:

  • 250ml warm milk

  • 7g yeast

  • 1 egg and 1 yolk

  • 350g flour for baking

  • 50g sugar

  • 1tsp salt

  • 1 vanilla

  • 50g butter melted

Steps:

Warm the milk (not hot).

Add the yeast and mix well until it dissolves.

Leave for 8-10 minutes.

In a bowl, add the flour, sugar, salt, and vanilla.

Melt the butter and leave it to cool down.

Add the eggs to the yeast and then the butter (make sure it is not hot).

Then combine everything and mix it.

Add flour to a surface and to your hands, and then move your dough and start rolling it and making it into a ball.

Once it is not sticky (you can add more flour if needed), place it in a bowl (cover the bowl with flour), cover it with a towel, and leave it for about an hour.

Ingredients

  • 2 Eggs

  • 250ml milk

  • 7g yeast

  • 100g sugar

  • 400g brown sugar

  • 85g powdered sugar

  • 2 vanilla

  • 1tsp salt

  • 480g bread flour

  • 215g butter

  • 2tbs cinnamon

  • 125ml heavy cream 35% fat

  • 120g cream cheese

For the filling:

  • 130g brown sugar

  • 2tbs cinnamon

  • 80g softened butter (make sure the butter is already soft or leave it out before so it is almost melted)

[Make sure you have more, in case the dough ends up bigger, that is why I have noted 400g of brown sugar at the top]

Steps:

Mix well.

Roll the dough on a surface with flour.

(Another option is to spread the butter on the dough first and then add the sugar with the cinnamon.)

Spread the filling on the dough and then roll it tightly.

Cut into equal pieces (use a knife or dental floss).

Spread butter on the bottom of the tray before adding the rolls.

Place them on top and let them rest for about 30 minutes.

Once they rise, pour the heavy cream on top and place them in the oven at 180 °C for about 20-25 minutes (Depending on whether you want them more juicy on the inside. But don't be afraid if you see the top getting more red-brown. They need at least 20 minutes).

For the topping:

  • 140g cream cheese (room temperature)

  • 50g butter (room temperature)

  • 100g powdered sugar

  • 1 vanilla

Steps:

Mix the cream cheese with the butter, add the vanilla and once they are mixed add the sugar slowly.

Once they are out of the oven, add the frosting while they are still warm.
