High-Protein Chocolate Chip Blondies (Soft, Fudgy & Actually Filling)
There are two types of desserts: 1. The ones that taste good but leave you hungry 20 minutes later. 2. The ones that taste good and feel like a full snack. These high-protein chocolate chip blondies are the second kind. They’re soft, slightly fudgy, naturally sweetened, and packed with protein from oats, Greek yogurt, and protein powder. Perfect for post-workout, afternoon coffee, or when you want something sweet without the sugar crash. And yes — they still have chocolate chips. We’re balanced here.

Ingredients
1 cup blended rolled oats (oat flour)
2 scoops (60g) protein powder (vanilla or chocolate)
½ tsp baking powder
¼ tsp salt
1 tsp vanilla extract
¼ cup peanut butter
¼ cup honey
½ cup unsweetened almond milk
½ cup Greek yogurt
¼ cup dark chocolate chips
Extra chocolate chips for topping (because we’re not minimalists)
Instructions
Preheat oven to 180°C (350°F). Line a small baking pan (about 8x8 inches) with parchment paper. If you don't have any, add butter or oil to the pan.
Blend the oats into a fine flour if you haven’t already.
In a large bowl, mix:
oat flour
protein powder
baking powder
salt
In a separate bowl, whisk together:
peanut butter
honey
almond milk
Greek yogurt
vanilla
Combine wet and dry ingredients (If you don't want to wash a lot of bowls, add the wet ingredients to the dry directly). Mix until smooth.
The batter will be thick but spreadable.Fold in the chocolate chips.
Spread evenly into your pan and sprinkle extra chocolate chips on top.
Bake for about 20 minutes (depends on your oven).
The center should be set but still slightly soft — don’t overbake if you want them fudgy.Let cool completely before slicing (this is important for texture).
Texture & Flavor Notes
Vanilla protein powder → more classic blondie flavor
Chocolate protein powder → deeper, brownie-like taste
Want them sweeter? Add 1–2 extra tablespoons honey
Want them thicker? Use slightly less almond milk
Why I Love These
They actually keep you full
No refined sugar
Super beginner-friendly
Great meal prep snack
Perfect with coffee
And honestly? They taste like something between a soft granola bar and a blondie. Which is exactly what I want at 4pm.
