High-Protein Chocolate Chip Blondies (Soft, Fudgy & Actually Filling)

Ingredients

  • 1 cup blended rolled oats (oat flour)

  • 2 scoops (60g) protein powder (vanilla or chocolate)

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • ¼ cup peanut butter

  • ¼ cup honey

  • ½ cup unsweetened almond milk

  • ½ cup Greek yogurt

  • ¼ cup dark chocolate chips

  • Extra chocolate chips for topping (because we’re not minimalists)

Instructions

  1. Preheat oven to 180°C (350°F). Line a small baking pan (about 8x8 inches) with parchment paper. If you don't have any, add butter or oil to the pan.

  2. Blend the oats into a fine flour if you haven’t already.

  3. In a large bowl, mix:

    • oat flour

    • protein powder

    • baking powder

    • salt

  4. In a separate bowl, whisk together:

    • peanut butter

    • honey

    • almond milk

    • Greek yogurt

    • vanilla

  5. Combine wet and dry ingredients (If you don't want to wash a lot of bowls, add the wet ingredients to the dry directly). Mix until smooth.
    The batter will be thick but spreadable.

  6. Fold in the chocolate chips.

  7. Spread evenly into your pan and sprinkle extra chocolate chips on top.

  8. Bake for about 20 minutes (depends on your oven).
    The center should be set but still slightly soft — don’t overbake if you want them fudgy.

  9. Let cool completely before slicing (this is important for texture).

  • Vanilla protein powder → more classic blondie flavor

  • Chocolate protein powder → deeper, brownie-like taste

  • Want them sweeter? Add 1–2 extra tablespoons honey

  • Want them thicker? Use slightly less almond milk
